Pan fried salmon with roast potatoesand broccolini (parsley butter sauce)


This simple salmon dish is easy to cook and perfect for a weeknight dinner after work. This recipe will feed two people.

Ingredients
Two salmon fillets
Two big size chat potatoes - cut into chunks
a bunch of broccolini - cut to 5cm length pieces

Chopped parsley - 3 table spoons
Butter - seven tablespoon scoops
1/2 lemon - cut to a quarter wedge and get rid of the seeds

Olive oil
Salt
Pepper
Water

Cooking method
Heat the oven to 180C, while the oven is heating up, melt about five table spoon of butter. Lay out aluminium foil / baking paper on a baking tray, distribute the potatoes on the tray and mix well with the melted butter, two table spoon of parsley, salt and pepper. Roast the potatoes in the oven for 30 minutes. After 30 minutes, check to see whether the potatoes are cooked, you should be able to easily pierce them with a fork, if not, put back in the oven for another 15 minutes. 

Rub the salmon with olive oil, salt and pepper on both sides. Heat a good splash of olive oil on a non-stick pan on medium heat, and fry the salmon, skin side down. Leave the fish to cook for about five minutes or until it is visible that almost half of the fish is cooked (the fish meat will change to white when cooked). Then, flip and cook the other side for another five minutes. Cooking time depends on the thickness of the fish, if you find that your fillets are bigger, it will need to be cooked for longer. Set aside and leave to rest for about 20 seconds, and serve while still hot.

Boil the broccolini in salted water (medium sized pot) for five minutes, and drain on a colander.

Put two table spoon of butter and a table spoon of parsley in a small rice bowl. Heat in a microwave on low heat for one minute until the butter has completely melted. Cover the bowl with a microwave cover to avoid mess. Stir the melted butter and parsley.

Serving: On a clean plate, put salmon in the middle of the plate, put the broccolini and potatoes on each side, and spread the butter parsley sauce on top of the salmon and broccolini. Put the lemon wedge next to the broccolini.
