Coriander Omelette
Like any other good moms, my dear mom gave me some 'wifes' tips'. She said that we should always have eggs in our fridge as we can create the easiest meals in short time. This coriander omelette dish is one of her recipes.
Ingredients
Eggs
Coriander leaves
Light soy sauce - a splash
Sweet soy sauce (Kecap Manis) - a splash
White pepper - a dash
Cooking oil
Cooking method
In a large bowl beat the eggs, coriander leaves, light soy sauce, sweet soy sauce, and white pepper. Mix well.
Heat oil in a pan (medium heat). Pour the egg mixture in the pan, and spread evenly. When the bottom part of the mixture is cooked (firm) flip the egg and cook until the other side is cooked. Transfer the egg to a serving plate.
Serve with rice and simple stir fried vegetable.
Adjust the ingredients as required. Four eggs should be enough for two adults, and you can put a lot of coriander leave in the mixture as it will reduce in size when cooked. Be careful not to put too much sauce into the mixture as it will taste too sweet / salty.
To achieve the same look as the photo, fold the omelette twice and cut to square size. Place coriander leaves on top.
