Quick fried rice
This recipe came into creation when I felt bored of eating eggs on toast for breakfast one weekend. I was happy to discover that the ingredients match well together and I especially love the sweetness of corn, peas and capsicum.
Ingredients
Brown rice - 2 cups for two people
A full bowl of Frozen peas, corn and capsicum - de- freeze (soak in hot water)
2 eggs - beaten
2 garlic cloves - mince
Chicken powder (stock) - a tea spoon
Oil

Method
Cook rice according to the instruction on the packaging, set aside. Heat oil in a wok, cook garlic until fragrant, then add peas, corn and capsicum, Cook for a few seconds. Add the egg mixture, stir constantly. When eggs are still softly cooked, add rice, mix well. Season with chicken powder and mix well. Check by tasting the balance of flavours, if you are happy with the taste, the dish is ready to be served. The frozen peas, corn and capsicum are the stars of this dish, the more the quantity, the yummier the dish will taste.
Serve in small bowls or plates.
