Easy Scones

Scones with Whipped Cream, Strawberry Jam and Fresh Strawberry Slices

We love scones! And I LOVE Devonshire tea. My boy can eat 2-4 scones plain. This scone recipe is so easy and freshly baked scones will be ready in half an hour. Important to remember: don't over work the dough & add milk slowly. Dry mixture means dry scones if the mixture is too wet you'll have trouble picking it up from the bowl.

Ingredients:
  • 1 cup of self raising flour
  • 1 teaspoon salt
  • Match box size salted butter softened
  • 2 teaspoons of sugar
  • Milk (just estimate according to dough texture)
  • Some milk to be brushed on top of the dough
  • Some flour to dust the working surface
  • Round shape cutter (whichever size you like your scones to be)

Method:
  1. Heat fan force oven to 160 degrees Celsius
  2. In a large bowl mix flour, salt and sugar. Insert softened butter, using your fingers break butter and mix well with the flour mixture until resembling crumbs - slowly add little milk at a time in the flour mixture and mix well until it becomes a soft dough. The dough should not be too dry or too wet.
  3. Place baking paper on a baking tray.
  4. Flour a working surface. Flatten the dough to about 1 cm thickness. Using circular cutter to cut circles - it is up to you how big of a scone you'd like to make. Place circle doughs on the baking tray side by side give some space in between
  5. Brush milk on top of each dough - bake in the oven for about 15 minutes - scones should be cooked by now, wait for scones to cool, then serve with whipped cream, jam & tea for Devonshire tea. Enjoy!
