Terong & Telur Balado With Jasmine Rice & Cucumber Slices

Balado chilli sauce (spice mixture) originated from West Sumatra, Indonesia (I was born in North Sumatra) and any balado dish is one of my top favourite Indonesian food of all times! Even as a child, I used to love eating fried eggplant and hard boiled eggs in this special chilli sauce. I remember my dad telling me not to eat too much eggplant as I was eating too much.

I'm so glad that this special sweet, salty, spicy sauce with such a unique & addictive flavour is actually easy to make. Just put the balado ingredients in the blender and fry with oil. Although it looks spicy, you can actually make it mild. My version of balado sauce is not that spicy.

Eggplant & Egg in Indonesian Balado Chilli Sauce (Terong dan Telur Balado)
This recipe will feed two people

Ingredients:

- 1 medium sized eggplant, washed, cut to slices or chunks 
- 2 hard boiled eggs, peeled

For Balado:
- 2 medium size eschalot, peeled and cut to chunks
- 3 cloves of garlic, peeled
- 4 large red chillies, stems removed and cut into half
- 1 medium red tomato, diced
- 1 table spoon of salt
- 1 tea spoon of sugar
-  A splash of water

- Canola/Vegetable oil for frying
- Blender 

Method:
- On a large non stick pan, heat a generous amount of oil and fry the eggplant chunks thoroughly by flipping it over periodically, set eggplants aside on a plate
- Lets make the balado sauce by putting all the balado ingredients in the blender and blitzing until the ingredients are well blended

- On the same non stick pan, heat a splash of oil and fry the balado chilly mixture for a few minutes. Add in the fried eggplant slices and hard boiled egg and mix the ingredients well.
- Taste test, and add salt and sugar according to your taste.
- Serve this dish with some steamed rice. Enjoy!
